This Spanish tomato soup is perfect for summer, super refreshing and easy to make!

Ingredients
- 1kg Tomatoes
- 1 cucumber, peeled
- 1 medium Green bell pepper
- 1/2 small red onion (or regular onion)
- 2 garlic cloves
- 3 tablespoons of Olive Oil
- 2 tablespoons of Balsamic vinegar (or any vinegar)
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon ground Cumin
- optional garnishes: jamón serrano, hard boiled egg chopped, croutons, fresh herbs, a drizzle of olive oil
- Mix: Combine all ingredients together in a blender or food processor. Mix until the soup reaches your desired consistency.
- Taste. Taste and season with extra salt, pepper and/or cumin if needed.
- Chill. Refrigerate in a sealed container for 3 to 4 hours, or until completely chilled.
- Serve. Serve cold, topped with your desired garnishes.
